Our philosophy of working the land is not based on dominating the land, but on trying to integrate the use of respectful agriculture in the natural environment of our ecosystem. In this way we achieve a double objective: on the one hand to live in a healthier environment and on the other to obtain a more natural, healthy and higher quality product, in which all the aromas and active ingredients of the wine are manifested as such, whole and without adulterations. These cares mean that, unlike other wines, our wine improves while it is bottled. Our organic farming practices are endorsed by the quality of our wines, and are also subject to the control of an Organic Production Certifier.
A red wine made exclusively from Tempranillo organically grown grapes from our vineyards in our estate Finca Santa Rosalía.
WINEMAKING: Grapes picked manually in boxes of 20kg from the estate’s oldest vines, and then selected on a selection table. Maceration is for 20 days and manolactic fermentation in French oak new barrels.
AGING: Aged in French oak barrels for 30 months. Then the wine is aged in the bottle for two years.
TASTING NOTES: Intense aromas of black fruits, violets and minerals, blended with spices, toee and coee. Persistent

WINEMAKING: Manual harvest, then we choose manually the optimal clusters on a selection table. Maceration for 10 days for a better extraction. Manolactic fermentation takes place in French oak barrels.
AGING: Aged in French and American oak barrels for 24 months. Then the wine is aged in the bottle for two years.
TASTING NOTES: A balanced and silky wine. Hints of fruit liqueur, coee, tobacco and cocoa.
